Ingredients

4 garlic cloves - finely sliced
6 tbsp Parsley - roughly chopped
300g Green Beans
500g Cherry Tomatoes - Halved
800g New Potatoes - Halved
4 Salmon Fillets - 150g each
4 tsp Butter

Instructions

1. Preheat your oven to 200°C/Gas Mark 6. Put a pot of water over a high heat with 1 tsp salt and bring to the boil. Prep the garlic and parsley. Trim the ends off the green beans and discard the ends. Cut the cherry tomatoes in half lengthways.
2. ‘Blanch’ your green beans by adding them to the boiling water for 2 mins, then remove them from the pot (you can use a slotted spoon for this) and put them in a bowl of cold water. Tip: Keep the boiling water to save time and pans.
3. Chop the potatoes in half and quarter any big ones. Add your potatoes to the boiling water that your beans were in and cook for 15–20 mins. Your potatoes are cooked when you can easily slip a knife through them.
4. Meanwhile, drizzle each salmon fillet with 1 tsp olive oil and season with ¼ tsp salt and a few grinds of black pepper on each side. Place on a baking tray, skin-side down and roast for 8–10 mins, until the fish easily flakes with a fork.
5. When the potatoes are cooked, drain them and set aside. Meanwhile, melt the butter in a frying pan over a medium heat. Add your tomatoes and season with ¼ tsp salt and a few grinds of black pepper. Cook for about 2 mins, until slightly burst.
6. Drain your green beans and then add them to the pan to cook, tossing regularly, for a few mins. Add your garlic and half the parsley and cook for 30 seconds, until fragrant. Set aside on a plate.
7. Once your potatoes are done, crush them slightly with a fork. In the same pan you cooked the tomatoes in, heat 2 tsp olive oil over a medium heat. Add your potatoes and cook for about 3 mins on each side, until golden brown and crispy. Sprinkle with your remaining parsley and season with ¼ tsp salt and a few grinds of black pepper.
8. Serve your salmon fillets with your green beans, tomatoes and crispy potatoes.
