
| 1 x 400g Can White Beans — Drained and rinsed | |
| 1 Garlic Clove — Roughly Chopped | |
| Juice of 1/2 Lemon | |
| 1/2 tsp Ground Cumin | |
| 1/2 tbsp Harissa Paste | |
| 1 tbsp Tahini | |
| 1 tbsp Olive Oil | |

| 8 Slices Rye | |
| 3 Carrots — Grated | |
| Chopped Chives |
| 1. | Put the drained beans, garlic, lemon juice, cumin, harissa paste, tahini and a little salt and pepper into a small food processor and blend until almost smooth but still with a little texture. |
| 2. | With the motor running, slowly pour in the olive oil. Taste and adjust the seasoning as needed. Add more harissa paste if you like it a little hotter. |
| 3. | Spread the houmous on the 8 slices of bread. Add the grated carrot to 4 of the slices, sprinkle with chives, and put the other 4 slices on top. Slice the sandwiches in half and eat immediately, or wrap in cling film to take with you. |
