| 1 x 400g Can Black Beans | |
| 6 Eggs | |
| 1 TL Chipotle Paste Optional) | |
| 4 Large Seeded Wraps | |
| 1 Ripe Avocado - Sliced | |
| Mexican Hot Sauce | |
| **For the Salsa** | |
| 200g Tomatoes, Diced | |
| 1/2 Red Onion, Diced | |
| Juice of 1/2 Lime | |
| 10g Koriander - Finely Chopped | |
| Chili Flakes - to taste |
| 1. | Start by making the salsa. Mix all the ingredients together and season with salt and pepper. Taste and add a little more chilli flakes or salt if needed. Put to one side. |
| 2. | Place a large frying pan over a medium heat. Add a glug of oil and, once hot, add the diced onion with a pinch of salt. Sweat until translucent and soft, then add the cumin and continue to cook for 1-2 minutes, until fragrant. |
| 3. | Add the beans and stir until heated through. |
| 4. | Put the eggs into a bowl with the chipotle paste, if using, and beat together with a fork or a whisk until well mixed. Season with a little black pepper. In a second pan, over a medium-low heat, scramble the eggs, stirring now and again until just beginning to set, then remove the pan from the heat and stir them into the beans. |
| 5. | Meanwhile, lay the wraps on four plates. Spoon the bean mixture in a horizontal line across the middle of each of the wraps and add a spoonful of salsa. Top with slices of avocado . |
| 6. | Fold the sides of each wrap inwards, then roll from the bottom to the top until you have a log, wrapping the filling tightly inside. |
| 7. | Serve with a little hot sauce on the side, if desired. |
