| 3 Ripe Bananas | |
| 100g Butter - melted | |
| 100 - 120g Brown Sugar | |
| 1 Egg | |
| 1tsp Vanilla | |
| 180g Flour | |
| 1tsp Baking Soda | |
| ½ tsp Salt | |
| 2-4 tbsp Milk | |
| 100g Chocolate Chips | |
| ½ tsp Cinnamon |
| 1. | Heat oven to 175°C conventional / 160°C fan. Grease or line a loaf tin. |
| 2. | Mash the bananas in a big bowl. Don't worry about making them perfectly smooth—little chunks are good. |
| 3. | Add melted butter, sugar, egg and vanilla. Mix with a fork/whisk until reasonably combined. |
| 4. | Add flour, baking soda, salt and cinnamon. Fold together just until you no longer see dry flour. |
| 5. | Add 2 tbsp milk. If the batter seems extremely thick, add another 1–2 tbsp. It should be thick and spoonable, not liquid. |
| 6. | Fold in the chocolate chips. Pour into the tin and sprinkle a few extra chocolate chips on top because obviously. |
| 7. | Bake 50–60 minutes, until golden and a knife/skewer inserted in the centre comes out with a few moist crumbs but no wet batter. |
| 8. | Let it sit 10–15 minutes in the tin, then remove. |
