
| 125 ml Lemon Juice (2-3 Lemons) | |
| 2 cucumbers (sliced) | |
| 5-6 mint sprigs (leaves removed) | |
| 1-3 tbsp agave syrup | |

| 1. | Put the lemon juice, sliced cucumbers and mint leaves into a blender and blitz until smooth, adding a little water if necessary. Once smooth, pour the liquid through a sieve or muslin into a large jug, pressing the pulp with the back of a clean spoon to get as much liquid out as possible. |
| 2. | Taste the liquid and sweeten as necessary, stirring in the agave syrup a little at a time. Add a couple of handfuls of ice and top up with very cold soda water until the desired dilution is reached (aim for roughly 1 part lemonade to 1 part water). |
| 3. | Serve chilled, with lots of ice, a slice of lemon and a sprig of mint in each glass. |
